Cottage Cheese Pancakes

Cottage cheese pancakes are the best breakfast although I get hungry again sooner than if I had my usual breakfast of two fried eggs with bacon, even when serving the pancakes with lots of whipped cream. Try the pancakes together with a little cheese for a savoury version and/or serve it with the Butter & Coconut Coffee.

The recipe for the cottage cheese pancakes is easy. You must have a good blender, and you have to be conscious about the characteristics of the HUSK psyllium fibres, as the texture of the batter will change the longer you wait before frying. The fibres actually expands in the fluid and the batter gets thicker quite quickly. Recipe below –  and the quick one just for one or two persons added further below!! Scroll all the way down.

How To Create These Cottage Cheese Pancakes

5 eggs (medium size)
275 g full fat cottage cheese
2,5-3 tbsp psyllium HUSK fibres. Exact amount depends on the texture of the cottage cheese and the size of the eggs
1 tsp of Sukrin Gold Sugar or 5 Stevia drops to sweeten a little bit (you can leave the sweetener out)
A little salt
The zest of one lemon or a little less
1 tsp of ground cardamom

  • Put the eggs and the cottage cheese in your blender.
  • Blitz it for 30 seconds
  • Add the dry items and the lemon zest
  • Blitz again for 20 seconds
  • Ensure that fibres stuck on the side of the blender gets into the batter
  • Put the pancakes quickly on a hot pan, the HUSK fibres will make the batter thicker quite quickly
  • Fry them on a very warm frying pan, use coconut oil for frying. Size them like a fried egg

The texture should be easy to pour out, but while you fry the first set of pancakes the batter will change a bit due to the psyllium fibres, so the last ones might be put on the frying pan with a wet spoon and be straightened a little.

Serve with whipped cream, slices of fruit such as apple, kiwi or banana and berries.
If you don’t eat them all, they are absolutely lovely for the next couple of days, either cold like a wrap or heated on a pan and served with even more whipped cream!!

PANCAKES for 1 or 2 persons

2 eggs, 150 g cottage cheese, 1 large tbsp HUSK, a little less than 1/2 tsp cardamom and 1/2 tsp vanilla powder, and a pinch of salt. You could add a few stevia drops if sweetness is needed.

Blend eggs and cottage cheese until the lumps are gone.
Mix the dry items and stir this into the eggs. Serve with whipped cream or full fat creme fraiche, and fruit or berries. Enjoy this wonderful and easy breakfast and feel spoiled 🙂

      Hi JMT, you’re right. Sorry about that. It’s small amounts and can be varied as you prefer. I just updated the recipe as I will recommend a little less than 1/2 teaspoon of both. I use ground cardamom, and organic if possible. The vanilla powder ought to be unsweetened. I always use an organic type, which is brown.
      Recently I had no ground cardamom in my house, so I crunched 2 whole cardamoms before adding it to the egg mass. That was delicious and can be done too. Hope this helps 🙂
