Sea-Bream Fillets with Pancetta-Shiitake Sauce

sea bream filletsThis recipe for Sea-Bream Fillets with Pancetta-Shiitake Sauce is one of my favourite dishes. At the same time it’s so simple.  If there are good things in your fridge for the sauce you’ll make this dish within 15-20 minutes.
In the picture above you can get an overview of the ingredients needed. If however you don’t fancy pork and therefore not pancetta either, you can continue without this ingredient. Just add a little more shiitake mushrooms. I reckon shrimps could replace the pancetta as well.
As the fillets are low in fat (and low carb of course) you must add fat to the dish. Don’t get tempted to cut the fat away or just to forget it; it’s your fuel and you’ll get hungry before midnight if you do so.

How To Make The Sea-Bream Fillets with Pancetta-Shiitake Sauce

Serves 2

2 (or 3) sea-bream fillets depending on the size
Pofiber as a thin bread-ish layer on the fish before frying – you can use Panko as well
Freshly chopped sorrel

Sauce made of;
A 2 mm slice of pancetta of a good quality, chopped
4-5 shiitake mushrooms (remove the stems)
A tsp freshly chopped chili
A little lemon thyme equal to 2 tsps leaves
50 mm white wine
Turmeric in slices, I recommend 2-3 cm (see picture above)
Butter for frying

Method

sea bream fillets shiitakePrepare the Pancetta-Shiitake sauce by frying the pancetta, the shiitake mushrooms, the chili and the sliced turmeric all together. Medium heat.
Use butter for frying although the pancetta is also fat, we need the fat. The butter must not get too dark brown.
Fry the ingredients for 5 minutes, stir while frying.
Add the white wine and let it simmer for a couple of minutes. Drizzle with lemon thyme. Put the sauce on a plate while you fry the sea bream fillets. On the picture you’ll get a look and feel of the Pancetta & Shiitake sauce.

Cover the sea bream fillets with a thin layer of Pofiber and a little salt.
Fry them in butter in a frying pan for 2 minutes on each side. On the picture above you see the sea bream fillets served on a plate with the sauce and my Basic Mayonnaise. I had a little watercress salad and lemon on the side. Drizzle with sorrel.

TIP; If you don’t have the mayonnaise, you could actually also use the Edamame and Pea Dip from Waitrose. It contains only 8 gr of carbs if you serve half a pot.
