For this wonderful veggie bake I use aubergine/eggplants and tomatoes as main ingredients. You can choose squash/courgettes, and you can add onions if you like.
I placed the sliced veggies in layers with olive oil and cheese. Season with chopped sage and sea salt and freshly ground pepper.
I fancy organic vegetables in general. Especially aubergines and tomatoes are more strong in their flavour if they are grown organically.
In the picture on the right I am half way through my layer work 🙂 as you can see. I added one more layer of aubergines, and then topped with grated cheese.

How to Do the Wonderful Veggie Bake
Serves 3-4 as a side dish
3-4 large tomatoes
125 gr feta (I used aged feta)
150 gr grated cheese
Olive oil like 3 tbsp
50 ml water
Sea salt and freshly ground pepper
Sage, finely chopped
1 clove finely chopped garlic
Heat the oven (200C/395F)).
Pour olive oil in a ovenproof dish, 28x20x7 cm.
Slice the aubergines and the tomatoes in 1 cm slices.
Make one layer of aubergines, then a layer of tomatoes and then a layer of cheese (with the feta in-between the layers and the grated cheese on top.)
Repeat the veggie layers. Season with salt, sage and garlic when making the layers. Add around 40-50 ml water before putting it into the oven.
Let it bake for 30-40 minutes. I covered it with tinfoil for the first 20 minutes. Enjoy!
